BBQ Brisket

3-4 lb. beef or pork brisket or roast, fat trimmed
Salt
Pepper
Garlic salt (or powder)
1/4 c soy sauce
2 T Worcestershire sauce
1 t onion salt
1/2 - 1 t cayenne pepper
1 onion, chopped
1 green pepper, chopped (optional)
1/2 to 1 c brown sugar
9 oz -ish of BBQ sauce (my fav is Cattlemen's Classic)

  1. Place meat on top of heavy foil in a roasting pan.
  2. Liberally spice both sides with salt, pepper and garlic salt. Rub these in.
  3. Pour soy sauce and Worcestershire sauce over the top.
  4. Finally, sprinkle onion salt and cayenne pepper on the top.
  5. Place roast in 300 degree oven, and cook for at least 4 hours (approx 1.25 hrs/lb of meat).
  6. Remove the meat from the pan and move to a dutch oven or crock pot. Include juices from pan, and add a little more water.
  7. Add onion and green pepper, and bring to a boil, then simmer for another hour. It's ready when the meat is fork-tender, and you can easily shred it (with two big serving forks, is fastest for me). Shred all the meat.
  8. Add brown sugar and BBQ sauce, to taste. Cook for 15 minutes more.

Not the healthiest option, but sure is yummy. Last time I made this, I roasted the meat for 4-5 hours, then let it cook on low in the crockpot overnight. Anything to save time.
